• 1 medium sweet onion diced
• 1 large tomato diced
• 3/4 Cup of Sutter Home Merlot
• 3 Tbsp fresh chopped garlic
• 2 Tbsp chopped shallots
• 2 Tsp tomato paste
• 4 Tbsp of lemon juice
• 2 Tbsp plus 2 tsp of heavy cream
• 4 Tbsp of butter
• 1 1/2 cup diced portabella mushrooms
• 1 lb ground chuck
• 1 lb ground sirloin
• 1 tsp of salt
• Vegtable Oil for brushing grill rack
• 6 French Hamburger Rolls, split
• 6 Slices of Swiss Cheese
