Asian Coleslaw With Peanut Dressing – Oracibo

Ingredients

• fresh ginger
• 1 ½ Tbsp. minced garlic
• ½ tsp. Sriracha sauce (or to taste)
• 5 cups thinly sliced green cabbage (use a mandoline if you have one)
• 2 cups thinly sliced red cabbage (as above)
• 2 large red bell peppers cut into very thin strips
• 2 medium carrots, peeled, cut into thin strips (or use a food processor), I have an old Mouli, so I used it
• 8 green onions, thinly sliced
• ½ cup chopped fresh cilantro
• Salt & freshly ground black pepper to taste
