Ingredients

• 4 boneless, skinless chicken breasts
• Salt and pepper to taste
• 1 tablespoon olive oil
• 1 apple, thinly sliced (Granny Smith recommended)
• 100 g (about 3.5 oz) Brie cheese, sliced
• 1 cup fresh spinach leaves
• 1 teaspoon fresh thyme leaves (or 1/2 dried thyme)
• 1/2 cup chicken broth
• 1 tablespoon Dijon mustard
• 1 tablespoon honey
• 2 tablespoons unsalted butter
