Ingredients

• 1 mild red chilli, seeded and chopped
• 1 inch piece fresh root ginger, peeled and chopped
• 1/2 tsp shrimp paste (see above)
• 50g (2oz) natural peanuts, skins removed
• good pinch of salt
• 2 tbsp sunflower oil
• 400g can coconut milk
• 675g (1 1/2 lb) sirloin or striploin steak, cut into ¬æ inch chunks
• 100g (4oz) natural peanuts, skins removed
• 2 shallots, finely chopped
• 1 garlic clove, chopped
• 1 tsp shrimp paste (see above)
• pinch of hot chilli powder
• 1 tbsp fresh lemon juice
• 1 tsp light brown sugar
