Aubergine chilli traybake recipe

Ingredients

• 3 aubergines
• 1 onion, finely chopped
• 3 garlic cloves, finely grated
• 0.5 tsp dried thyme
• 1 tsp ground cumin
• 2 tsp mild chilli powder
• 0.5 tsp fine sea salt
• 3 tbsp tomato purée
• 400 g tin of chickpeas, drained and rinsed
• 400 g tin of red kidney beans, drained and rinsed
• 400 g tin of chopped tomatoes
• 2 tsp olive oil
• 80 g light mature cheddar, grated
• 1 pinch freshly ground black pepper, or to taste
