• 1 cup corn kernels
• 1/4 cup + 2 tbsp scallions, thinly sliced, divided
• 1/4 cup chopped cilantro, divided
• 1 ripe avocado, peeled, halved, pitted and diced
• 1/4 cup diced tomato
