Ingredients

• 600g beetroot
• 200g turnip (or potatoes)
• 1 small white onion
• 1 tbsp. olive oil, more for topping
• ½ tsp. caraway seeds
• 1/2 bunch of thyme
• 1 bay leaf
• 1 tbsp. horseradish (from the glass or freshly grated)
• 1 tbsp. apple-cider vinegar or white wine vinegar
• sea salt & fresh pepper
