Ingredients

• 1 cup colby cheese, finely grated
• 3 garlic cloves, crushed
• 2 tbs continental parsley, finely chopped
• 500g chicken mince
• 2 cups panko breadcrumbs
• 1/2 cup plain flour
• 2 eggs
• 3 cups vegetable oil *for frying
• 1 large tomato chopped *to serve
• 1 red onion finely chopped *to serve
• 1 handful continental parsley *to serve *extra
• 1 pinch salt and pepper *to taste
