Ingredients

• 2-3 tbsp vegetable oil
• 900g braising steak, cut into large chunks
• 2 tbsp plain flour
• 500ml good-quality beef stock
• 3 thyme sprigs
• 2 tbsp butter
• 1 small onion, finely chopped
• 2 garlic cloves, crushed
• 250g Portobello mushrooms, sliced
• 1 tbsp wholegrain mustard
• 2 tsp Marmite
• 2 tsp golden caster sugar
• 1 x 375g pack ready-rolled puff pastry
• 1 medium egg, beaten
