Hearty Holiday Salad - Lemon Stripes

Ingredients

• 3/4 cup chopped candied pecans or walnuts
• 5 to 6 slices overcooked, crunchy bacon, chopped
• 3 cups arugula, kale, and/or spinach, roughly chopped
• 1/2 cup thinly sliced cheddar cheese
• 1/2 cup dried cranberries or raisins
• 1/4 cup olive oil
• 2 Tbs apple cider vinegar
• 1 tbs dijon mustard
• 1 tbs maple syrup
• 1 garlic clove, pressed or minced
• Juice from 1/2 lemon
• Salt and black pepper to taste
