Ingredients

• 4 sweet potatoes
• Olive oil
• 1 medium brown onion, finely diced
• 2 cloves garlic, minced
• 1 ½ tbsp tomato paste
• 400 mL passata
• 200 mL vegetable stock
• 1 ½ tbsp chipotle sauce
• 1 ½ tsp sugar
• 1 tsp smoked paprika
• 1 tsp cumin
• Salt, to taste
• Freshly ground black pepper, to taste
• 2 x 400 g cans four bean mix, drained
