Ingredients

• 1 x Onion (sliced)
• 2 x Garlic cloves (crushed)
• 1 tbsp x Smoked paprika
• 2 tsp x Ground cumin
• 200g x Chorizo (roughly chopped)
• 200g x Tinned sweetcorn
• 300g x Basmati rice
• 400g x Tinned chickpeas
• 1 x Chicken stock cube or pot
• 1 x Large chicken
• Sea salt & Black pepper
• 2 x Limes (zested and juiced)
• 3 tbsp x Coriander (roughly chopped)
