• 1 pound chorizo, kielbasa or other spicy smoked sausage

• 1/4 cup mayonnaise
• 2 tablespoons honey
• 1 teaspoon minced fresh thyme
• 1/2 teaspoon fennel seeds, ground in a mortar and pestle

• 2 tablespoons dry white wine
