Creamy Asparagus Soup with Grilled Cheese Croutons

Ingredients

• 1 Tbsp unsalted butter
• 1 Tbsp olive oil
• 1 small onion, peeled and roughly chopped
• ½ red onion, peeled and roughly chopped
• 2 cloves garlic, minced
• 1 tsp salt
• 1 pound asparagus, ends removed and chopped into 2” pieces
• 3 sprigs of fresh thyme
• 4 cups chicken or vegetable stock
• ½ cup light cream
• 6 slices of bread
• Butter or margarine
• 1 cup coarsely grated cheddar cheese
