Mango Salsa

Ingredients

• 6 cups Mangoes underripe
• 1 1/2 cups red bell pepper diced
• 1/2 cup Sweet onion, like Vidalia finely chopped
• 1/2 teaspoon red pepper flakes crushed
• 2 teaspoons Garlic finely chopped
• 2 teaspoons Cilantro finely chopped
• 1 teaspoon Mint leaves finely chopped (optional)
• 2 teaspoons Ginger finely chopped, or ginger paste
• 1 cup Light brown sugar
• 1/4 cup Lime Juice
