Cherry Poached Pears with Beacon Gin Recipe - Elegant Dessert

Ingredients

• 1/2 cup Sheringham Beacon Gin
• 3 1/2 cup water
• 2 cups frozen cherries
• 1/2 cup brown sugar (or honey)
• 1 cinnamon stick
• 2 star anise
• 1 vanilla bean
• 4 large Bosc pears (with stem), peeled
• 2 tbsp cornstarch with 3 tbsp cold water to make a slurry
