Ingredients

• 1 teaspoon vanilla extract
• 1 tablespoon all-purpose flour
• 2 tablespoons water
• 1 egg
• 2 tablespoons sherry (any kind), or substitute orange juice
• 1 egg yolk
• ¼ teaspoon salt
• ¼ cup plus 2 tablespoons (packed) light brown sugar
• ¾ cup dark raisins, coarsely chopped
• Lemon juice, if needed
• ½ cup granulated sugar
• ¼ cup (½ stick) unsalted butter or margarine, at room temperature
• 1 teaspoon finely grated lemon rind (colored outer layer only, no pith)
• 1 teaspoon baking powder
• 1¾ cups all-purpose flour
• Big pinch of ground nutmeg
• 2 tablespoons vegetable shortening
