- 1T olive oil, plus extra for roasting
- 1T balsamic vinegar
- 1t sugar
- 1 cup cherry tomatoes, halved
- salt and pepper, to taste
- 1 small packet rocket, washed
- fresh goat’s cheese or feta cheese, to taste
