• 4 pork loin chops
• 4 cloves garlic, smashed
• 1/2 bunch sage, roughly chopped
• 1/2 bunch thyme, roughly chopped
• 1–2 Tbsp olive oil
• Sea-salt flakes and freshly ground black pepper, to taste
• Apple sauce
• 4 Granny Smith apples, unpeeled
• Pinch ground cinnamon
• Pinch ground nutmeg
• Pinch ground cloves
• Juice and finely grated zest of 2 lemons
• 2 Tbsp honey
• Sprouts
• 300g Brussels sprouts, halved lengthways
• 1-2 Tbsp olive oil
• 1 clove garlic, smashed
• 1/3 cup walnuts
