• 1 cup sushi rice, rinsed thoroughly
• 1 cup cold water
• ½ teaspoon salt
• 1 ½ tablespoons rice wine vinegar
• ½ tablespoon sugar
• ½ cup vegetable oil, for frying
• ½ cup Japanese mayonnaise
• 1 – 2 tablespoons sriracha sauce
• 1 avocado, thinly sliced
• 2 teaspoons black & white sesame seeds, to garnish
• 2 tablespoons chives or spring onions, sliced
