Sweet Potato Tortilla Soup

Ingredients

• 1 lime, juiced
• 2 tablespoons coconut oil
• 1 large sweet potato
• 1 can black beans, drained & rinsed
• 1 can hatch green chiles, diced
• ½ cup onion, diced
• 3 roma tomatoes, diced
• 3 garlic cloves, minced
• ¼ cup fresh cilantro, chopped
• ½ red bell pepper, diced
• 1 teaspoon ground cumin
• 4 cups vegetable broth
• 4 6-inch-diameter soft corn tortillas, cut into ½-inch-wide strips
• ½ cup full fat canned coconut milk
