Kale Tabbouleh
A great picnic salad or side salad for BBQs. Made from chopped kale, couscous, cucumber, tomatoes and fresh herbs – all tossed in a simple lemon dressing.
Ingredients
- 60g Kale leaves
- 100g couscous
- 100g cucumber
- 100g tomato
- 15g parsley
- 5g Mint
- 4tbsp lemon juice
- 6tbsp extra virgin olive oil
- salt & pepper
