Ingredients

• 240g chorizo, sliced
• 2 brown onion, sliced
• 4 cloves of garlic, sliced
• 4 large vine tomatoes
• 225g baby yellow plum tomatoes
• 3 green tomatoes
• 2 basil sprigs
• 2 fresh oregano sprigs
• 2 fresh thyme sprigs
• 1 tbsp za'atar
• 1 tbsp sweet paprika
• 1 tsp chilli powder
• 2 tsp cumin
• 1 tsp baharat
• salt, to taste
• black pepper, to taste
• 1 tsp apple cider vinegar
• 1 tsp date syrup (silan)
• 3 slices of sourdough bread
• extra virgin olive oil
• 4 large eggs, room temperature
• 100g feta cheese, crumble
• handful of chives, finely chopped
