Pesto Pasta Salad - Live Learn Lovewell
Emma Lovewell's Martha's Vineyard-inspired Pesto Pasta Salad is guaranteed to hit the spot with its tomatoes, peas, and sweetness.
Ingredients
- One 16-oz bag of dried pasta
- 4-5 heaping spoonfuls of pesto (about 1/3 cup. I use my Basil Pesto , but also check out my Garlic Scape version )
- 3 garlic cloves, minced
- Salt and pepper
- 1 pint cherry tomatoes, halved
- 1 bunch of haricot verts
- Basil
- 1/4 cup pine nuts, toasted
- Lemon
- In a large pot, bring water to a rolling boil. Salt generously and add pasta. Cook to manufacturer’s instructions for al dente.
- Drain pasta and add 4-5 heaping spoonfuls of pesto (about 1/3 cup) and minced garlic. Now is the time to add mustard if you want. Toss to combine. Add salt and pepper to taste.
- Add cherry tomatoes, haricot verts, and peas. Garnish with basil and pine nuts.
- Cover and rest in fridge for at least an hour to let the flavors deepen. Dress with a lemon squeeze, and enjoy room temperature or chilled.
