Ingredients

  • One 16-oz bag of dried pasta
  • 4-5 heaping spoonfuls of pesto (about 1/3 cup. I use my Basil Pesto , but also check out my Garlic Scape version )
  • 3 garlic cloves, minced
  • Salt and pepper
  • 1 pint cherry tomatoes, halved
  • 1 bunch of haricot verts
  • Basil
  • 1/4 cup pine nuts, toasted
  • Lemon
  • In a large pot, bring water to a rolling boil. Salt generously and add pasta. Cook to manufacturer’s instructions for al dente.
  • Drain pasta and add 4-5 heaping spoonfuls of pesto (about 1/3 cup) and minced garlic. Now is the time to add mustard if you want. Toss to combine. Add salt and pepper to taste.
  • Add cherry tomatoes, haricot verts, and peas. Garnish with basil and pine nuts.
  • Cover and rest in fridge for at least an hour to let the flavors deepen. Dress with a lemon squeeze, and enjoy room temperature or chilled.
