Ingredients: 2 cups (500ml) boiling water; 1 cup (220g) caster (superfine) sugar; 1 litre good-quality coconut milk; 3 teaspoons vanilla extract; 1 cup (250ml) boiling water; ½ cup (110g) caster (superfine) sugar; 3 cups (750ml) fresh mango purée (about 3 mangoes); 2 teaspoons finely grated lime rind; ⅓ cup (80ml) lime juice; 3 prepared coconut shells (see cook’s notes) and toasted flaked coconut

This is my kind of dessert. Delicate tropical snow that’s on the right side of sweetness. It’s such a refreshing treat. Serve it in coconut halves for a super-fun island vibe.
