Cranberry Walnut Banana Cake

Ingredients

• 300 to 350 g (skin removed) over-ripe bananas, mashed
• 150 g butter/margarine
• 90 g brown sugar
• 300 g plain flour
• 2 teaspoons baking powder
• 1/2 teaspoons baking soda
• 50 ml vegetable oil
• 2 eggs
• 50 g cranberries, chopped and coated with some flour from the recipe
• 30 g walnuts, lightly roasted and chopped
• 2 teaspoons lemon juice
• 1/2 teaspoons vanilla essence
• A pinch of salt
