  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons garlic, chopped
  • 1 tablespoon ginger, minced
  • 1 medium yellow onion, diced
  • 1 tablespoon ground coriander
  • 2 teaspoons ground cumin
  • 1 1/2 teaspoons Indian chile powder or ground cayenne
  • 2 1/2 cups diced carrots (from about 7 medium carrots)
  • 2 cups carrot juice
  • 2 cups chicken stock or vegetable broth
  • 2 cups coconut milk
  • 1 cup orange juice
  • 1/4 cup unsalted cashews
  • 1/4 cup golden raisins
  • 1/4 cup Greek yogurt
  • 2 tablespoons finely chopped cilantro
