- 1 pound dry Lima Beans (soak overnight, then discard soak water)
- 3-4 medium to large Sweet Potatoes (pealed and diced)
- 1 onion (chopped)
- 1 tablespoon Extra Virgin Olive Oil (for sautéing onion)
- 1-2 Apples (optional)
- Season with Celtic Sea Salt or Herbs to taste.
