Ingredients

• 2 1/2 pounds ground chuck
• 1/2 pound onion, finely chopped
• 1 1/4 cloves garlic (optional)
• 2 cups all-purpose flour
• 2 tablespoons, plus 1 teaspoon, cumin
• 3/4 cup chili powder
• 5 pints, plus 1 cup, beef stock (or water and beef bouillon to equal 5 pints and 1 cup)
• 1/2 cup paprika
• 1/8 teaspoon red pepper (optional)
• 1 tablespoon salt
• 1/2 teaspoon black pepper
