- 200gm unsalted butter (softened)
- 250gm brown sugar
- 400gm plain flour
- 3 teaspoons ground ginger
- 2 teaspoons cinnamon
- 2 teaspoons bicarbonate of soda
- 1 cup boiling water
- 1 cup Taylor Pass Honey
- 2 eggs
- 4 ripe apples (Golden Delicious if available)
- 2 tablespoons unsalted butter
- ¼ cup sugar
- 1 bay leaf (fresh if possible)
- 60ml brandy
- 1 cup cream, whipped to soft peaks
