Ingredients

• 4 - 5 large potatoes
• 2 eggs, hard boiled and chopped
• 1 medium carrot, grated
• 2 stalks celery, finely chopped
• 2 spring onions (green onions), finely chopped
• 1 ts mixed herbs
• 1 ts american mustard
• 1/2 cup mayo (I always use Miracle Whip cuz its a Canadian staple but any mayo will work)
• 1/2 light sour cream or low fat yoghurt
• salt and pepper to taste
• 1 Tbs paprika
