Ingredients

• 1 pound sliced okra, in all
• 4½ pounds whole chicken thighs
• 1 pound top-quality smoked sausage or andouille, sliced ¼ inch
• 1½ cups finely chopped onion
• 1½ cups finely chopped celery
• 1 cup finely chopped bell pepper
• ¼ cup minced garlic
• 1½ to 2 quarts chicken stock, in all
• 1½ cups dark roux
• 3 bay leaves
• 1½ teaspoons dried thyme
• 1½ teaspoons black pepper
• salt and cayenne pepper to taste
• 1 teaspoon fish sauce, optional
• 1 teaspoon white wine vinegar, if needed
• 1 bunch green onions, thinly sliced
• hot cooked rice, for serving
