Ingredients

• 3 to 4 Glenmor Chicken fillets, diced
• 1 leek, finely sliced
• 3 Fresh Choice carrots, peeled and finely sliced
• 100ml chicken stock
• 4 tbsp flour
• 50g butter
• 400ml milk
• ½ tsp paprika
• ½ tsp Dijon mustard (optional but it is delicious)
• 6 to 7 large Fresh Choice Irish Rooster Potatoes, peeled and thinly sliced
• 2 tbsp butter
• 1 tbsp olive oil
• 1 tbsp mixed chopped fresh herbs (parsley, thyme, rosemary and chives)
• 2 tbsp grated parmesan
• Olive oil
• Salt and pepper
