Ingredients

• 100 g (2 thick slices) white bread, crust removed
• 160 ml (2/3 cup) hot milk
• 900 g (2 pounds) ground meat (beef or a mixture of beef and pork)
• 2 eggs
• 1 onion, diced
• 2 tbsp chopped parsley
• 1 tsp dried thyme
• 1 tsp dried marjoram
• 2 tsp salt
• 1/2 tsp ground black peper
• 3 tbsp olive oil, for frying
• 3 tbsp olive oil
• 1 1/2 tbsp all-purpose flour
• 1 garlic clove, minced
• 1 1/2 tbsp sugar
• 600 g (2 1/2 cups) tomato passata
• 750 ml (3 cups) water
• 2 sprigs of parsley
• 3 basil leaves
