Heart Shaped Ravioli Recipe

Ingredients

• 2 cups all-purpose flour, plus extra for dusting
• 3 large eggs, at room temperature
• 1 tablespoon olive oil
• 1/2 teaspoon salt
• 1–2 tablespoons water, as needed
• 1 cup ricotta cheese, well-drained
• 1/2 cup grated Parmesan cheese
• 1 cup fresh spinach, chopped and sautéed until wilted, then drained
• 1 garlic clove, minced
• 1 teaspoon lemon zest
• Salt and freshly ground black pepper, to taste
• Pinch of nutmeg
• 6 tablespoons unsalted butter
• 10 fresh sage leaves
