Ingredients

• 1 tablespoon olive oil
• 2 each tomatoes, diced
• 1 bunch green onions, chopped fine
• 1 each jalapeno minced, no seeds
• 1/2 cup diced purple onions
• 1/8 cup rice wine vinegar
• 2 cups fresh mango, diced
• 1/2 each red bell pepper, diced
• 1/2 each green bell pepper, diced
• salt and pepper to taste
