Meat Loaf with Mushroom Gravy

Ingredients

• 1 medium onion, chopped
• 1/2 cup corn flake crumbs or breadcrumbs
• 1 tbsp ketchup
• 2 lbs hamburger ((swap out some for sausage for extra flavor))
• 2 eggs
• 1 tsp garlic
• salt
• pepper
• 8 oz mushrooms, sliced
• 2 garlic cloves, chopped
• 2 cups beef or chicken stock
• 1/2 cup cocunut milk (or whole milk)
• 1 tsp dijon mustard
• 3 tbsp ghee or cocunut oil
• 2 tbsp tapioca starch (can use corn starch too)
