• 1.5kg chicken thighs and drumsticks (excess fat trimmed)
• 300ml TCC Premium Coconut Milk
• 1 tbsp Yeo's Sambal Oeleck
• 2 cloves garlic (crushed)
• 1 inch ginger knob (minced)
• 1 stalk lemongrass (crushed)
• 1 small shallot (minced)
• 1 tbsp coriander powder
• 1 tbsp cumin powder
• 1 tbsp turmeric powder
• 1 tbsp brown sugar
• Lemon fish sauce dressing
• Peanuts
• Pinch of salt
• Bunga Telang coconut rice (served as a side)
• Coriander
• Sliced green onion
• Sliced chilli
• Fried shallots (for garnish)
• Bean sprouts
• Long beans
• Carrot sticks
