Ingredients

• 1 large courgette
• 1 red pepper
• 1 yellow pepper
• 1 medium red onion
• 1 small sweet potato
• 2 cloves garlic
• 3-4 chicken thighs
• 1 tbsp oil
• 200g couscous
• 300 ml (1⁄2 pint) boiling water
• Handful of fresh mint or coriander
• Juice of 1⁄2 orange, pips removed
