Citrus Spinach Salad with Avocados and Oranges

Ingredients

• 2 oranges, cut into segements
• 1 teaspoon Dijon mustard
• 1-2 avocados, cubed (gently toss with vinaigrette unless you cut right before serving
• 1/4 cup fresh orange juice
• 1/4 cup dried cranberries
• 2 teaspoons sugar
• 1/4 cup vegetable oil
• 2 tablespoons fresh lemon juice
• 2 tablespoons champagne vinegar
• Salt and freshly ground black pepper to taste
• 5-6 cups salad greens, I used baby spinach and baby romaine
