- 1 cinnamon stick
- 1½ tablespoons caster (superfine) sugar
- 125 g (4½ oz) mascarpone cheese, at room temperature
- 1 tablespoon Tia Maria liqueur
- 1 tablespoon Marsala
- 4 tablespoons caster (superfine) sugar
- 1 orange
- 3 teaspoons powdered gelatine
- 1 large free-range egg, separated
- fresh raspberries, to serve
