Ingredients

  • 2 tablespoons coconut or olive oil
  • 1 tablespoon black mustard seeds
  • 1 teaspoon ground turmeric
  • a small thumb-sized piece of ginger, peeled and grated
  • 1 green chilli, finely chopped
  • 2 cloves of garlic, finely chopped
  • 1 teaspoon cumin seeds
  • 1 x 400g tin of chopped tomatoes
  • 11⁄2 tablespoons light brown or coconut sugar
  • 1⁄2 teaspoon flaky sea salt
  • 2 tablespoons cider vinegar
  • 1 tablespoon coconut or olive oil
  • 2 red onions, finely sliced
  • 800g new potatoes, sliced 0.5cm thick
  • 1 teaspoon fennel seeds, roughly bashed
  • a few sprigs of coriander
  • a pinch of dried chilli flakes
  • the zest of 1 unwaxed lime, plus an extra lime cut into wedges
  • 100g spinach
  • 6 organic eggs
  • 250g halloumi, sliced into 1cm-thick pieces
  • salad leaves, to serve (optional)
