Ingredients
- 2 tablespoons coconut or olive oil
- 1 tablespoon black mustard seeds
- 1 teaspoon ground turmeric
- a small thumb-sized piece of ginger, peeled and grated
- 1 green chilli, finely chopped
- 2 cloves of garlic, finely chopped
- 1 teaspoon cumin seeds
- 1 x 400g tin of chopped tomatoes
- 11⁄2 tablespoons light brown or coconut sugar
- 1⁄2 teaspoon flaky sea salt
- 2 tablespoons cider vinegar
- 1 tablespoon coconut or olive oil
- 2 red onions, finely sliced
- 800g new potatoes, sliced 0.5cm thick
- 1 teaspoon fennel seeds, roughly bashed
- a few sprigs of coriander
- a pinch of dried chilli flakes
- the zest of 1 unwaxed lime, plus an extra lime cut into wedges
- 100g spinach
- 6 organic eggs
- 250g halloumi, sliced into 1cm-thick pieces
- salad leaves, to serve (optional)
