- 12–14 flour tortillas
- 6 oz Face Rock Monterey Jack, shredded
- 3 cups cooked, shredded chicken
- 15 oz can black beans, drained and rinsed
- ½ cup chopped fresh cilantro
- 1 can chopped, roasted green
- chiles
- 2 TB butter
- 1/2 onion, chopped
- 2 tbsp flour
- 1/2 cup chicken stock
- 1/4 cup milk
- 8oz cream cheese, softened
- 10 oz green chile enchilada sauce
- 1/2 cup sour cream
- salt & pepper to taste
