Zack's Birthday Carrot Cake

Ingredients

• 3/4 cup canola or vegetable oil
• 1/2 cup applesauce
• 1 cup white sugar
• 1 cup brown sugar
• 3 tsp vanilla extract
• 2 cups flour
• 2 tsp baking soda
• 2 tsp baking powder
• 1/2 tsp salt
• 3 tsp cinnamon
• 1/4 tsp nutmeg
• 1 cup (8 oz) crushed pineapple, well drained
• 3 cups shredded carrots
• 1 cup chopped walnuts
