Roizy’s Famous Kokosh
Somehow I feel like a competent balabusta when there is a kokosh cake in the freezer. Yields 3–4 kokosh cakes.

- 3 ounces fresh yeast (or 3 tablespoons Gefen Yeast)
- 1 cup sugar
- 5 pounds Glicks Flour
- 4 (4-ounce) sticks margarine (1 pound)
- 1/2 cup oil (plus additional for smearing)
- 2 packages vanilla sugar
- 1 cup orange juice
- 3 cups warm water
- 6 whole eggs plus 4 yolks
- 3/4 teaspoon salt
- 2 cups Gefen Cocoa Powder
- 5 cups sugar
- 1 tablespoon coffee
- 1/2 cup Glicks Flour
- 1 package vanilla sugar
- 1 teaspoon Gefen Ground Cinnamon (optional)
- 1 yolk
- 2 teaspoons sugar
- 1 teaspoon water
