- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups mushrooms, sliced
- 2 cups spinach, roughly chopped
- 1 teaspoon thyme
- teaspoon rosemary
- 6 eggs
- ½ cup cream
- 1 cup s Gruyère cheese, shredded
- Salt
- Pepper
- Butter, for greasing
