• ¼ cup polenta
• 2/3 cup brown rice, rinsed
• 1 ¼ cup vegetable stock
• 2 garlic cloves, crushed
• 1 cardamom pod, crushed
• 1/2 bunch silverbeet
• 100g red onion, finely sliced
• 5g ginger,grated
• 1/2 tablespoondried thyme
• 1/2 tablespoon dried oregano
• 100g low-fat tasty cheese, grated
• 25g pumpkin seeds, plus extra to garnish
• 1/2 lemon, zested and juiced
• ½ bunch flat leaf parsley, chopped
• 2 eggs, lightly beaten
• 1 tablespoon salt
