• 2 tomatillos, husked, rinsed, and chopped
• 1 lb. queso fresco, crumbled
• 2 ancho chiles, stemmed and seeded
• 4 cups masa harina
• 1 tsp. salt
• 11/2 tsp. baking powder
• 1/2 cup shredded queso añejo
• Leaves of 1 head bibb lettuce
• 1 bunch radishes, trimmed and thinly sliced
