Harvest Chicken Salad - earthboundfarm

Ingredients

• 5 oz Earthbound Farm Spring Mix
• 1 medium sweet potato, peeled and diced into cubes
• 1 cup cooked chicken breast, sliced
• 1/4 cup crumbled feta cheese
• 2 tbsp sliced almonds, chopped
• 2 tbsp olive oil (for roasting sweet potatoes)
• Salt and pepper to taste

• For the Balsamic Dressing:
• 3 tbsp balsamic vinegar
• 2 tbsp olive oil
• 1 tsp Dijon mustard
• 1 tsp honey
