Chipotle Turkey Chili with Sweet Potatoes & Kale - Wedge Community Co-ops

Ingredients

• 2 Tbsp. olive oil
• 1 yellow onion, diced
• 1 red bell pepper, stemmed,deseeded & diced
• 1 orange or yellow bell pepper,stemmed, deseeded & diced
• 1 tsp. kosher salt, divided
• 3 small sweet potatoes, diced
• 3 cloves garlic, minced
• 1 Tbsp. chili powder*
• 1 tsp. smoked paprika*
• 1 tsp. ground cumin*
• 1 tsp. ground coriander*
• 1 Tbsp. ground cinnamon*
• 3 chipotle peppers (from a can, with adobo sauce), minced
• 1 Tbsp. tomato paste
• 1 12-oz bottle of beer (use your favorite light beer)
• 1 15-oz can fire roasted tomatoes
• 1 28-oz can crushed tomatoes
• 2 15-oz cans garbanzo beans,drained & rinsed
• 4 cups cooked, shredded turkey breast (or shredded chicken)
• 4 cups finely shredded kale
